Our crab and bacon stuffed grilled cheese sandwich is creamy, decadent, and layered with amazing flavor. Our recipe takes this classic comfort sandwich to the next level with sweet crab, crispy bacon, and savory notes from Creole Smoke and Citrus Herb.
This crab and bacon stuffed grilled cheese sandwich is SUPER easy to make and finishes in the oven — so you’ll never have to worry about burnt bread.

Ingredients
- 1/2 a block of cream cheese, softened (115g)
- 1.5 cups shredded sharp cheddar cheese
- 1/3 cup white cheddar cheese (we used Trader Joe’s Unexpected Cheddar)
- 1 teaspoon Station 1923 Creole Smoke All-Purpose Seasoning
- 1/2 teaspoon Station 1923 Citrus Herb All-Purpose Seasoning
- 1/2 cup bacon, crispy and crumbled (approximately 5 strips)
- Bread of choice for 4-5 sandwiches
- Butter as-needed

Step 1: Prep
Pre-heat your oven to 400F or turn on the broiler. While the oven warms up, cook your bacon until it’s nice and crispy, and drain on paper towels. Set aside. If your cheese isn’t shredded, do that. Make sure your cream cheese is softened or close to room temperature before you begin.
Once your bacon is fully drained, break it up into crumbles, taking care to remove any bits that are purely fat.
Step 2: Make Your Mix
In a mixing bowl, combine your softened cream cheese, shredded cheeses, bacon crumbles, crab meat, Station 1923 Creole Smoke, and Station 1923 Citrus Herb.
Use a spatula to mix everything together well. Give your mix a taste — adjust any seasonings as necessary.
Step 3: Assemble
Usually, grilled cheese gets its toasty breaded exterior from spreading butter (or mayonnaise) on the outside. We skipped buttering our bread, because we used a gluten-free loaf that’s very buttery and similar to a brioche. It browns beautifully on its own without any help.
If that’s not the case for your bread, feel free to spread butter on the outsides of each slice. You can even take the flavor up a notch by sprinkling in some Citrus Herb to make a compound butter first.
Once you’ve buttered (or not buttered), it’s time to assemble your crab and bacon stuffed grilled cheese sandwiches. Spread a generous helping to each bottom slice of bread, then place the second slice of bread on top. This recipe typically yields 4-5 sandwiches, depending on the size of your bread.
Step 4: Stove, Then Oven
Turn the fire on and warm your pan up. Not too high — a medium-low flame should do it. Transfer each crab and bacon stuffed grilled cheese sandwich to your pan, cooking as many as you can comfortably fit (and flip) at a time.
Once your bread has browned on one side, flip and let the other side get brown. If the inside of your crab and bacon stuffed grilled cheese isn’t quite melting, don’t worry.
Once all of your sandwiches have browned, place them on a baking sheet or tray, and place them in your warmed oven to finish. About 5-7 minutes through, flip them with your spatula and let them continue for another 5-7 minutes. This keeps both sides browned and toasty while the interior gets melted, gooey, and delicious.
Step 5: Serve and Enjoy!
Once the insides of your crab and bacon stuffed grilled cheese are melted, remove the baking tray from the oven. Slice and serve!
