Homemade Turkey Breakfast Sausage Patties (Gluten Free & Better Than Store-Bought!)
With grocery store prices going nowhere but up, we're all looking for ways to make our food budget stretch. One of the easiest ways we do that in the Station 1923 household is by eliminating things we know we can make ourselves (bonus points if we already have everything we need to make it happen, too).
And that's exactly where this homemade ground turkey breakfast sausage patty recipe comes in.
Not only are they incredibly easy to make, but the patties comes together in less than 10 minutes with a handful of simple ingredients already in your kitchen. This turkey breakfast sausage recipe can be easily doubled or tripled to make your own heat-and-eat frozen breakfast sausage, too.
Oh, and did we mention that it's a lot better for you (and tastes better) than store bought sausage? Plus, we use a lot less sodium and they're gluten free!

Ingredients
- 1lb ground turkey (we use 93/7 because a little fat is good for flavor!)
- 1 tablespoon Station 1923 Brown Sugar Smoke All-Purpose Rub
- 1 tablespoon + 1/4 teaspoon Station 1923 Citrus Herb All-Purpose Seasoning
- 1/4 teaspoon crushed red pepper or red pepper flakes
- 1/4 teaspoon ground allspice
- 1 teaspoon black pepper (coarse if you have it; if not, fine will work)
- 1/4 teaspoon smoked paprika (optional)
- 1 tablespoon neutral, high smoke point cooking oil (our go-to is avocado oil, but you can use canola, coconut oil, or others)

Step 1: Throw Everything in a Bowl
When it comes to prep, this turkey breakfast sausage patty recipe is as easy as they come. Simply grab a mixing bowl big enough to fit your ground turkey, and drop it in. Add all your seasonings (don't forget the Brown Sugar Smoke and Citrus Herb!), and use your hand (with a glove is recommended) or spatula to mix until all of the seasonings are distributed evenly throughout the ground turkey.
Step 2: Form Patties
One by one, scoop a little seasoned ground turkey into your hands and gently press it between your palms to form patties. Transfer it to a parchment paper-covered plate or baking sheet.
Repeat until all of the seasoned ground turkey is used up. If you like uniform shapes, a mini burger press or mold is a great way to make the patties look more polished. If you like 'em rustic, keep shaping by hand.
Step 3: Heat Skillet and Cook
Throw your skillet on the stove and allow it to pre-heat for a few minutes. Then, add your cooking oil and allow that to heat as well (usually takes a minute or less). One by one, drop in your turkey breakfast sausage patties, leaving enough space beween them so they're not touching.
Cook your turkey breakfast sausage patties 2-3 minutes then flip, and cook for another 2-3 minutes until the internal temperature reaches 165F°. If you have to cook turkey breakfast sausage patties in multiple batches, repeat this step, wiping any leftover stuck bits from the pan between batches.
Step 4: Eat and Store
Once your turkey breakfast sausage patties are fully cooked, they're ready to eat! Pair them with waffles (we've got a great browned butter waffle recipe here), grits, oatmeal, eggs, and fruit — or make our sweet potato biscuits and turn them into breakfast sandwiches!
Once cooled, you can use parchment paper to individually wrap the turkey breakfast sausage patties and store them inside a freezer bag. They'll keep in the freezer for up to 6 months!
